Abstract

Food Science field is a fast developing industry all over the world. The clientele of today are not satisfied with mere supply of food but expect interesting combinations and flavour, highest level of cleanliness and pleasing environment. Towards this goal this volume is envi-saged. The various objectives of good food service has been identified and information is given with these objectives in view.
