Abstract

Ice cream is a palatable nutritious, healthyful and relatively inexpensive food. As such ice cream production has increased rapidly in recent years in many countries of the world. There is need and emphasis on various aspects of ice cream manufacture to meet the accelerated demand for frozen dairy foods. Under such circumstances, the book on ice cream has been revised and reprinted and hence is most welcome for those interested in food and dairy products manufacture.
