Abstract

Food, one of the basic necessities of man, necessary for his survival, growth, physical ability, health and life itself requires a scientific approach and study. This book is an excellent introductory text for the purpose. It outlines the basic principles of food science, topics such as inter-related food science, causes of food changes, food processing methods and handling and processing of foods.
