Abstract

Pulses constitute an important source of protein in the Indian dietary. Being seasonal crops, they are usually stored for certain period, after harvest for four main. reasons viz., to ensure an even supply throughout the year, to preserve the surplus food produced for transport to food deficit areas, to serve as reserve during times of food scarcity and to get good market price.
