Abstract

The book opens with a historical review on foods. The theory of nutrition is well documented and the functions and metabolism of the nutrients are spelled out in simple term. The next few chapters on nutrition and food preparation, go into the details of planning meals, convenience foods, storage, cooking and conservation of nutrients.
