Abstract

Shrimp mainly of genus Penaeus is a major sea food in Eastern coast of India. The shellfish processing industry in India generates 8.5 million tons of shell waste per year. About 35 to 45 per cent by weight of shrimp raw material is discarded as waste depending on the species and processing method applied.
