Abstract

Lutein is one of the important yellow carotenoids present in green leafy vegetables, yellow fruits, flowers and egg yolk. Human beings incapable of synthesizing lutein, have to depend on dietary sources for their requirements. The major carotenoids consumed in leafy vegetables are, P carotene, lycopene, lutein, violoxanthine, neoxanthine, cryptoxanthine and zeaxanthine'. Lutein is an important vision related hydroxy carotenoid, though has no pro-vitamin A activity and it is mainly accumulated in the macula of human eye.
