Abstract

Realization of the importance of trace elements in nutrition has prompted revaluation of food articles of human diet from the point of view of trace element's adequacy, deficiency and toxicity. Cereals and pulses are staple food for Indian population. They are used in breakfast, lunch and dinner in both rural and urban areas. They are primary source of copper, manganese and selenium and major source of zinc in vegetarian diets.
