Abstract
Vegetable constitute an important item of human diet which provide oil the essential nutrients and roughage required for a balanced diet, in a counthy marked by malnutrition and undernutrition vegetables have an important role as "Protective Food". Vegetables are rich and cheapest source of beta carotene and compensate for animal foods in combating vitamin A deficlency. Gopalan emphasised the need for correction of vitamin A deficits in Indian diets by encouraging the consumption of vitamin A rich foods available cheaply and easily rather than by consuming synthetic and expensive pills.Downloads
