Abstract

Sandesh is a popular chhana based milk sweetmeat of eastern India and Bangladesh. It is perhaps the oldest milk sweetmeat of Bengal and slowly the demand of this milk sweet is spreading to the other parts of the country also. Varieties of sandesh are available in the market, out of which narampak variety is the most popular". Sandesh is usually prepared from cows' milk. But out of the total milk produced in India the lion's share is contributed by the buffaloes and normally it is not preferred for sandesh preparation.
