Abstract

The nutritional quality of plant proteins such as cereals and oil seeds is still a problem in human nutrition. A symposium held in Nov. 1983 sponsored by the Protein Division of American Association of cereal chemists is an important step in solving the above problem. This book is a compilation of the various papers presented on those lines.
