Abstract

The availability of protein foods is becoming more difficult throughout the world and this situation is more intense in developing countries. Reports of the food and Agricultural Organisation show that the diet of the inhabitants of the developing and under developed countries is sufficient in calories, mainly from vegetable origin and is short in animal protein. The total protein consumption needs serious attention with special emphasis on animal protein which is mostly well balanced in amino acids and with high biological value.
